
Using Marrow in a Dessert
This Marrow Dessert recipe is quick and simple, and utterly delicious! Again, you can use the abundance of tender, young marrows in the garden, or replace with courgette if marrows aren’t available. I have added colour to this creamy dessert by including a small amount of butternut squash, but this isn’t essential.
I incorporate vegetables in breakfasts and dessert-type dishes whenever I can for a number of reasons.

Alternative to Natural Yogurt
Many people find that their health benefits from avoiding dairy. The reason behind this can be considered another time, but natural yogurt does deliver an easy dessert that is often sorely missed. This Marrow Dessert actually provides a no-added sugar, no dairy alternative to natural yogurt. It is also considerably cheaper than purchasing some of the dairy-free yogurts that are available. All you need is a saucepan and a blender, and 5 minutes of cooking time. You can make enough of the dessert to store in a jar in the fridge, and it will last for several days.

Marrow Dessert
Ingredients
- 2 cups of peeled and chopped tender, young marrow or courgette

- 1/2 cup of peeled and chopped butternut squash
- 1/2 cup water
- 50 g creamed coconut – roughly chopped
- Flavouring to taste. Choose from:
- vanilla powder
- lemon essence
- nutmeg
Method
- Place chopped marrow and squash in a pan with the water
- Cover with a lid, bring to the boil and then reduce heat to a simmer
- Cook for 5 minutes until veggies are soft. Check that the pan doesn’t boil dry.
- Stir in the chopped coconut cream and stir until dissolved.
- Remove pan from the heat and allow to cool for a few minutes.
- Place ingredients in a blender and whizz until smooth
- Add your flavouring of choice and serve hot or cold.
- Eat it on its own or spooned over Pumpkin Pie Muffins or Sunflower Seed Pancakes
