Cauliflower ‘Popcorn’

Here is a snack with a difference! A no-guilt nibble, suitable for the yeast-free anti-candida programme, or if you are just wanting to watch your weight. The idea may take a bit of getting used to, but well worth trying! Using turmeric in the recipe adds in some additional antioxidant and anti-inflammatory properties, giving you even more reason to enjoy this snack.

Cauliflower ‘Popcorn’

First, wash a medium head of cauliflower thoroughly. Break off the top florets (about 1cm in size) from half the head, and place on a baking sheet. (The stalks can be chopped and added to soups and sauces – going really creamy if blended).

Melt a heaped teaspoon of coconut oil in a pan and then stir in two pinches of turmeric. Pour the turmeric oil over the florets and gently toss to get them as covered as possible with the oil.

Place in a hot oven – 200 degrees celsius, for 25-30 minutes, stirring and turning every 10 minutes. Remove from the oven when the florets are soft and golden.

These taste good as they are, or add a little black pepper and sprinkle with dried chives or garlic granules.
