Mix and Bake Loaf

Here is a really quick and easy ‘bread’ alternative, suitable for those avoiding yeast and sugars, and also for those wanting a low carbohydrate filler. A helpful recipe for both the ‘Anti-Candida’ and low carb diets.

Linseeds are a source of omega 3 fatty acids, which can be helpful in reducing inflammation and balancing hormones. They are also very high in fibre, making them great to use if you have a tendency for constipation. However, you may find that you need to introduce them slowly, or to use just 1-2 teaspoons per day, in order to prevent getting an uncomfortable, windy tummy.  If this is the case, you can always replace some of the ground linseeds in this recipe with more ground sunflower seeds, or some ground pumpkin seeds. 

‘Mix and Bake’ Loaf

125g finely ground linseeds

125g finely ground sunflower seeds

15g ground psyllium husk

1 teaspoon baking powder

180ml water

Method 

Combine the dry ingredients, mixing out any lumps.

Press any lumps out of the ground seeds

Add the water and stir thoroughly to form a firm dough.

 

Press mixture into a lined loaf tin

Pack the dough into a small loaf tin lined with non-stick paper and bake in a preheated oven at 190 degrees Celsius for 1 hour.

Remove from tin and allow to cool on a wire rack. Keep wrapped in the fridge for several days, or freeze in slices to take when needed.  This is great as a bread replacement or for toast.
